What is your favorite part about being a Bauerhaus Pastry Chef?
Amelia Cottrell: I have freedom to experiment! I love that I get to play with different flavor profiles, try out new recipes, and help clients' ideas come to life!
What is your favorite Bauerhaus Pastry cake flavor?
Amelia Cottrell: Trick question? All of them, but I guess it really depends on what kind of mood I'm in. I'm gonna say top 3 are s'mores, banana, and pina colada.
What do you see as the biggest trend in wedding pastry?
Amelia Cottrell: A lot of jazzed up dessert tables. Weddings are of course about the couple, but usually, guests' opinions are a top priority. I've seen dessert displays ranging from a small wedding cake with cupcakes and a few bowls of candy, to 5 elaborate cakes, all different flavors and styles, additional cookies, macarons, baklava, cake balls, etc. sometimes even pie or cobbler. In the end, they just want guests to find something on that table that they can get down with.
