What is your favorite part about being a Bauerhaus Pastry Chef?
Amelia Cottrell: I have freedom to experiment! I love that I get to play with different flavor profiles, try out new recipes, and help clients' ideas come to life!

What is your favorite Bauerhaus Pastry cake flavor?
Amelia Cottrell: Trick question? All of them, but I guess it really depends on what kind of mood I'm in. I'm gonna say top 3 are s'mores, banana, and pina colada.

What do you see as the biggest trend in wedding pastry?
Amelia Cottrell: A lot of jazzed up dessert tables. Weddings are of course about the couple, but usually, guests' opinions are a top priority. I've seen dessert displays ranging from a small wedding cake with cupcakes and a few bowls of candy, to 5 elaborate cakes, all different flavors and styles, additional cookies, macarons, baklava, cake balls, etc. sometimes even pie or cobbler. In the end, they just want guests to find something on that table that they can get down with.

What has been your favorite creation?
Amelia Cottrell: It's hard to pick a favorite creation, because when I'm creating, whether I'm icing a cake or coming up with a new recipe, I want that exact thing I'm working on to be the best thing I'm capable of doing. When I finish, I want a rush of pride to flow through me, knowing that I did that and I'm putting out an amazing product to represent this company. Something I've created that holds a special place in my heart are my cheesecakes, which the recipe I use was passed down from my great-grandma. I also really love macarons because you can fill them with any flavor and it works! My favorites are strawberry lemonade, white chocolate mocha, pumpkin spice cheesecake, and blackberry lavender!
